Let’s Make Cookies – Egg free Chocolate Chip Cookies
Everyone loves a good Chocolate Chip Cookie warm and gooey out of the oven. I make these cookies for my family and friends a lot. I don’t eat them because I don’t currently eat gluten and dairy. I used to make these cookies egg free and dairy free when my husband was eating a vegan diet. Now everyone just prefers the egg free Chocolate Chip Cookies. If you do not want to use butter you can substitute margarine, I used to use Earth Balance sticks. Another variation if you like butter is to use all butter and no shortening.
My batch is big as I find that when I make Chocolate chip cookies, it’s like bacon, I can never make enough of them. I also like to make my cookies big.
4½ cups of flour (I prefer bread flour)
2 teaspoons baking soda
2 teaspoons salt
1 cup of melted butter
1 cup butter favored shortening
1½ cups brown sugar
1½ cups white sugar
2 teaspoons of real vanilla
½ cup water
1 cup chocolate chips
1 cup butterscotch chips
1 cup nuts pecans or walnuts (optional)
Directions: Heat oven to 375°. Melt butter in the microwave or on the stove. Mix butter, shortening, sugars, vanilla, and water together in large mixing bowl. Add in flour, baking soda and salt. Finally mix in chips. Make 2″ balls and flatten slightly. Put them on parchment paper on baking sheets. Bake for 12-14 minutes until slightly brown, You do not want them all brown. When the cookies come out of the oven, bang the cookie sheet on the counter so that the cookies deflate. Then let them cool.
