All “In” Oatmeal Cookies

This is a hearty oatmeal cookie recipe without gluten, dairy, or egg, which I have been avoiding for about 4 months. It is for when you need that sweet treat without too much guilt. I like the recipe with dried cherries the best, but dates are a great alternative.
All “In” Oatmeal Cookies
10 cups thick oats
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
¾ cup coconut oil
¾ cup vegetable oil (I use Canola oil)
1 ½ cups maple syrup
4 tsp vanilla
1 cup dried cherries or dates
Heat oven to 375°. Toast all the oats. Cover cookie sheet with parchment paper. Pour oats on to pan and put into heated oven. Toast oats for 20 minutes. Cool oats enough so you can handle them. Measure out 5 cups of the toasted oats and put them into a food process until the oats have the consistence of course flour texture.
Put ground oats into mixing bowl along with soda, cinnamon, salt and remaining toasted oats and blend together. Melt coconut oil in the microwave. Hand mix coconut oil, Canola oil, maple syrup, water and vanilla into dry ingredients. Finally mix in your choice of dried fruit.
Dough may be a bit juicy if the mixture is still warm either from the warm coconut oil or the warm oats. Put dough into refrigerator for 1 hours or overnight, then remove and stir. If the mixture is too stiff to stir you will need to wait until it warms up enough to allow you to stir it. Next form dough into 2” balls. I have been known to use my hands so I can compact them tightly, or an ice cream scoop. Lay the balls onto a cookie sheet covered with parchment paper. Then press the cookie down slightly with you hands or bottom of a glass.
Bake for 15 – 20 minutes until lightly brown. Cool cookies. I usually let them cool on the cookie sheet unless I need the cookie sheet then, I slide the parchment paper and cookies on to the counter to finish the cooling process.
Notes: I like my cookies on the bigger side. You can make them small if you wish. Another option is to use all coconut oil, replacing the oil with coconut oil.
