Got 7 Minutes for a Toffee Break?
This is an easy candy recipe that I got from my mother-in-law. You only need to stir for 7 minutes so it’s quick too. This was one of my father-in-law favorite treats. I would make it once a year for him for his birthday on January 1. He would always say, “this has a lot of butter”. And of course, it does, which makes it incredibly rich. A small piece is all you need.
Pecan Toffee Candy
2 cup Butter
1½ cup Brown Sugar
2 cup Pecans
2 cup Chocolate Chips
Generously grease 9”X13” pan with butter, then sprinkle pecans over the bottom of pans. Heat butter and brown sugar in sauce pan over medium to high stirring constantly until it boils. Continue to boil for 7 minutes. Don’t stop stirring! Carefully pour over pecans and spread evenly.
Immediately after pouring mixture lightly sprinkle chocolate chips over hot mixture. Wait about a minute until the chocolate chips are melted and then spread melted chocolate chips with a knife. Cool in the refrigerator and break into pieces.
