Sourdough Gluten – Free Pretzels and Pizza Dough

Yields: 12 Pretzels

3½ cups Gluten-Free Flour (Reserve ½ cup to use after rising of dough) – I posted earlier my favorite gluten free mixture

3 Tbsp Brown Sugar

2 tsp Instant Yeast

3 Tbsp Ground Flax Seed

1¼ tsp Coarse (more salt for pretzel topping)

1 tsp Xanthan Gum

½ tsp Baking Powder

1¼ cup Gluten Free Sourdough (See earlier post for recipe)

½ cup warm water

1 Egg beaten

2 Tbsp soft butter

Mixed Dough. Ready to rise.

Roll the dough into 12” – 14” rope pieces.
Formed Pretzels

Water Bath

4 quarts water

¼ cup baking soda

2 Tbsp white sugar

Add formed pretzels one at a time.
Pretzel will initially sink
Remove pretzel after 5 seconds or when it starts to float up to the surface.
Finished Pretzels

Instructions:

Combined flour, sugar, yeast, flax, salt, xanthan gum, and baking powder.  Add sourdough, water, egg, and butter. Stir until it forms a dough then need the dough until smooth.

Butter bowl, put dough into bowl and cover with plastic wrap.  Let dough rise until dough is doubled, about 90 minutes.

Put parchment paper on two baking sheets.  4 quarts of water to a boil.

After dough has risen, add additional flour as needed to make sure you can handle the dough.  Be Careful not to add too much flour making the dough dry and hard to handle. Turn dough out onto a surface.

Divide dough into 12 equal pieces.  Cover the dough and work with one piece at a time.  Roll the dough into 12” – 14” rope pieces. Form them into pretzels and put them on the parchment covered pans.  If you are not sure how to form pretzels watch a youtube video.

After all the pretzels are shaped, add baking soda and sugar to boiling water.  Slowly add ingredients to the boiling water, be careful as the water will become more vigorous for a short time.

Using a slotted spatula carefully add the pretzels to the boiling water mixture.  Let pretzel boil in the water for about 5 seconds. The pretzel will initially sink and then float to the surface when it should be removed.  Use the slotted spatula to remove the pretzel and put back onto backing sheet.

Sprinkle pretzels with coarse salt.  

Bake pretzels 425 degrees until golden brown about 18 to 20 minutes.

Allow the pretzels to cool.  Serve warm. Heat in microwave if needed.

Note 1: If you would rather have cinnamon and sugar covered pretzels then do not use salt, instead dip the baked pretzels in melted butter and then into a cinnamon and sugar mixture.

Note 2: Another option is to make 8” flat pizzas.  Then put them in the boiling water mixture, Sprinkle with basil or oregano, then bake until almost done, remove from oven.  Add topping and return to oven until topping is done.

Both are veggie pizzas. The top one has regular cheese and the bottom one has dairy free cheese.
