Gluten Free Almond Butter Cookies

- 1 cup Almond Butter
- ½ cup Brown Sugar
- ½ cup White Sugar
- 1 Egg
- 1 tsp Baking Soda
- ¼ tsp Salt
- 1 tsp Vanilla
Preheat oven to 375℉. Cover cookie sheets with parchment paper. In a bowl mix all ingredients together until smooth.

Roll into 1½ balls then roll in white sugar and place on cookie sheets. Flatten each ball with a fork in a criss-cross pattern.

Bake for 7 – 9 minutes or until very light brown. Allow cookies to cool on the cookies sheets.
Cookies will be crispy and slightly chewy. Makes about 2 dozen depending on the size of the cookie.
