Roasted Red Pepper Hummus
I like my Hummus without garlic so I have come up with my own recipe. I guess if you like garlic you can add it to this recipe.
1 can of Garbanzo Beans (15oz)
2 ½ TBSP of Lemon Juice
⅓ Cup Tahini
4 or 5 Red or any colored pepper
¼ tsp of basil
½ tsp of salt
Roast peppers in over at 350º. I cut them into strips and put them on parchment paper and bake for 45 minutes. Let cool. Drain liquid from the beans. Put beans into small food processor along with the remaining ingredients including the cooled peppers and blend until thoroughly mixed. If too dry you can add a little water.
