Split Pea Soup
1 TBSP of Olive Oil
1 medium Onion, chopped
1-2 cloves of Garlic, Pressed (Optional)
1 tsp Cumin
½ tsp salt
1-2 Bay Leaves (I use two)
2 cups dried Split Peas (1LB)
8 cups of Water
4 Carrots, sliced
2 Potatoes, cubed
Sauté Onions and garlic until soft. Wash the peas in a strainer. Add all ingredients except the carrots and potatoes and bring to a boil, then reduce to a simmer for 1 hour. Next add in the carrots and potatoes and simmer another 30 minutes until or until the vegetables are soft. Remove Bay leaves from the pot. I like my pea soup to be mostly smooth, so I put ½ of the soup into my blender and blend until smooth, then I add it back into the pot. Be caution because you will be blending a hot soup. You can also skip the blending process and just eat.
I like to serve my pea soup with cheese and pumpkin seeds.
