Gluten Free, Vegan Oatmeal Chocolate Chip Cookies
Mix by hand in large bowl:
¾ Cup Canola Oil
1 Cup Brown Sugar
1 Cup White Sugar
½ tsp Vanilla
Mix in small bowl, let sit for 15 minutes, then add to ingredients above:
- 2 Tbls of Ground Flax
- 6 Tbls of Water
Add the rest of the ingredients and mix by hand:
2 1/2 Cups of Oat Flour
1 tsp Soda
1 tsp Salt
½ tsp Cinnamon
3 Cups of Regular Rolled Oats
¾ Cup Raisins
¾ Cup Chocolate Chips
Let dough sit for 30 minutes to absorb liquid. Use hands to compress dough into tight balls and flatten before baking. I use parchment paper. Bake at 350º for 10 – 15 Minutes depending on the size. I like to make the cookies big.

I do get tired!!
I’ve made three batches of these so far and each has been excellent! I cook a few just to make sure they don’t spread too much, and sometimes have used a bit less oat flour than usual. Love ’em!!
